Bones are constantly renewing through a process called remodeling. Old bone is broken down and removed by the cells called osteoclasts and new bone tissue is laid down to replace the old bone by cells calld osteoblast. When adults stop growing the bone plates will harden and fuse so no further growth takes place. Growth is limited by fusion of the epiphyseal plate.
